For many people, December is all about drinks, dinners, socializing and more dinners. So it's great fun, but it often also brings the necessary energy dips and unwanted kilos. Healthy enjoyment is the solution, and these healthy cakes with chocolate and avocado are perfect for that!
What do you need for 5 healthy cakes?
- 150 gr spelt flour
- 2 tbsp. coconut oil, melted
- 1 tsp baking powder
- 4 tbsp. honey
- 20 gr cocoa powder or Cocoa Mix
- 200 gr dark chocolate, preferably sugar-free
- 2 avocados
- 1 vanilla pod
- 6 tbsp. almond milk, unsweetened
- 5 medjoul dates
- 2 tbsp. seeds, kernels or puffed grains (for example, pumpkin seeds, hemp seeds or puffed quinoa)
- 5 mini quiche molds with loose bottom (10 cm)
How to make these tasty healthy cakes?
- Preheat the oven to 180 degrees;
- Mix the spelt flour with the baking powder, 1 tbsp melted coconut oil, honey and the cocoa powder and knead this into a cohesive whole with your hands (it can remain slightly crumbly, but should stick);
- Use the other tbsp of coconut oil to grease the baking tins and spread the "dough" over the baking tins (press well!);
- Bake the bottoms for about 15 minutes in the preheated oven and allow to cool well;
- Melt the chocolate au bain-marie and then blend it with the avocados, dates, the pith from the vanilla pod and the almond milk in the blender to form a mousse;
- Spread the mousse over the cooled cake bases and sprinkle with seeds and kernels of your choice!
