Are you sometimes at a loss as to which healthy snack to put on the table tonight? Want to fill a drinks board with goodies, but at the same time it has to be healthy? Then these spinach egg rolls are the healthy snack you are looking for!
Eggs are incredibly good for the brain because they are packed with choline and other vitamins and minerals like B6, B9, B12, iodine, potassium, sodium and more!
Preferably buy your eggs directly from the farmer to avoid animal cruelty.
Ingredients for 1 roll:
- 2 eggs
- 50 gr fresh spinach, torn into small pieces
- 50 ml almond milk unsweetened
- 2 tbsp fresh thyme
- 30 gr gr grated goat cheese
- 1 tbsp sundried tomatoes julienne
- 1 tbsp. toasted pine nuts
- ½ tsp coconut oil
- Pepper and salt
How do you make this healthy snack?
- Beat the eggs with the almond milk, spinach, thyme and some salt and pepper;
- Heat the coconut oil in a small skillet and pour in the egg mixture evenly;
- Cook the omelet over low heat with a lid on the pan and carefully turn it over after about 5 minutes;
- Place the omelet on a cutting board and sprinkle with the grated cheese. Let the omelet cool slightly, top with the sun-dried tomatoes and toasted pine nuts;
- Carefully roll the omelet and cut small rolls from it.
Tip: In order to roll the omelet, of course it should be as thin as possible, but this is not always easy with flipping it in the pan. Slipping the omelet onto a large lid and then "tipping" it upside down back into the pan will keep the omelet whole!
